For the Salad

1 lb. butternut squash
1 lb. brussel sprouts
1 red bell pepper
1 tsp. salt
1 tsp. black pepper
2 tsp. dried oregano
3 tbsp. olive oil
Fresh greens, such as spring mix or baby spinach

For the Dressing

1 avocado
Juice of 1 lime
1/4 cup olive oil
1 garlic clove
1/4 tsp. black pepper
