Summer Melon Salad

The summer sun is starting to shine! Pool parties, picnics, and backyard gatherings are upon us. And while others gravitate towards the grill, you can bring a cooler vibe to the cookout with a refreshing fruit salad. Three different types of melon come together with basil and lemon for a colorful bowl that will entice every palate. Put your own twist on this recipe by topping it off with feta cheese or subbing the basil for fresh mint.



Servings: 3

Ingredients


¼ c. caster sugar or superfine sugar

⅓ c. water

3 whole cloves

1 smashed cardamom pod

1 lemon, sliced

½ watermelon, balled

½ honeydew melon, balled

½ canary melon, balled

7 fresh large basil leaves, chiffonaded



Preparation

  1. To make light sugar syrup, combine sugar and water in a pan and cook until sugar is dissolved.

  2. Add in cloves, cardamom, and lemon slices. Boil for 5 minutes and set aside.

  3. Combine melon balls in a serving dish.

  4. Drizzle with sugar syrup and mix in basil.

  5. Let sit for 7-10 minutes to marinate.
