Watermelon Dessert "Pizza"


An inch-thick watermelon circle, cut into 6 slices. The slices are topped with cream, berries and mint.

Looking for a show-stopping dessert for a summer cookout? Here’s a delicious combination of fresh, seasonal fruits presented in a fun and unexpected way. Most of the ingredients can be found in the produce section, and you can use any type of granola for the topping, which adds another layer of flavor as well as a satisfying crunch. Your guests will be wowed by the array of colors and flavors of this tasty treat!

Servings: 4

Ingredients

1 watermelon

8 oz. coconut cream, whipped

4 strawberries

3 kiwis

3 apricots

½ c. blueberries

⅓ c. coconut flakes

½ c. granola

1 tbsp. fresh mint



Preparation

  1. Cut a ripe watermelon into round discs about 1-2 inches thick.

  2. Whip coconut cream until it reaches a soft consistency, similar to whipped cream.

  3. Cut 3-4 strawberries into thin slices. Set aside.

  4. Peel and cut 2-3 kiwis into thin slices. Set aside.

  5. Remove pits from apricots and cut fruit into thin slices. Set aside.

  6. Spread the whipped coconut cream around the top of the watermelon disc.

  7. Place the cut strawberries, kiwis, and apricot slices on top of the coconut cream.

  8. Top with blueberries, coconut flakes, and granola.

  9. Sprinkle a few sprigs of mint across the top. Slice and serve.

  10. Enjoy!
