Summer Berry Buckle

Fresh berries are one of the great treats of summer, and this dish makes the most of them. Although similar to a coffee cake, a buckle gets its sweetness from fruit rather than brown sugar, and with its burst of color and flavor, it’s perfect for either dessert or breakfast. It’s also a delicious way to use leftover berries, because you can use whatever mix you have on hand. Try different combinations to find your favorite taste!

Ingredients
½ c. butter, softened
½ c. sugar
¼ c. brown sugar
3 eggs
½ tsp. vanilla
1 ½ c. flour
½ tsp. salt
1 tsp. cinnamon
¼ tsp. baking powder
4 ½ c. mixed berries (blackberries, blueberries, and raspberries)
Powdered sugar, to taste
Preparation
Preheat oven to 350°F.
Grease a 9-inch cake pan with butter.
In a medium bowl, mix the butter, sugar, and brown sugar until fluffy.
Add the eggs one at a time, then add the vanilla. Whisk until combined.
Fold in the flour, salt, cinnamon, and baking powder until combined.
Fold in the berries.
Transfer to a baking pan.
Bake for 40 minutes, or until golden brown.
Cool for 30 minutes before serving.
Slice and sprinkle with powdered sugar.
