Red Velvet Cheesecake Cupcakes


These delicious red velvet cupcakes hide a sweet, creamy center of homemade cheesecake that is so easy to put together! Since they’re already red, you don’t need to do anything extra to serve them as a tasty Valentine treat. Even better: This recipe uses store-bought cake mix, so you won’t be slaving in the kitchen all day. Happy Valentine’s Day!

INGREDIENTS


1 box red velvet cake mix

16 oz. cream cheese

1 c. powdered sugar

2 tsp. vanilla extract

2 c. cream cheese frosting

 

PREPARATION

  1. Preheat oven to 375° F.

  2. In a large bowl, prepare the red velvet cake batter according to the directions on the box.

  3. In a separate bowl, combine cream cheese, powdered sugar, and vanilla, stirring until smooth.

  4. Divide the red velvet cake batter evenly among a lined muffin tin, filling halfway. Spoon some of the cream cheese mixture onto the batter. Top with remaining batter until each one is about ¾ of the way full. Bake for 20 minutes, then cool.

  5. Pipe the cream cheese frosting onto each cupcake, then top with red velvet crumbs.

  6. Enjoy!
