Get ready for St. Patrick’s Day with these delightful Mint Chocolate Chip Cookies. The vibrant green candy chunks add a cheerful pop of color — just like the first signs of spring. This recipe is so easy the entire family can help, but be careful … they’ll beg to make another batch!




Servings: 6-8

Ingredients


16.5 oz store-bought chocolate chip cookie dough

¼ cup cocoa powder

4.5 oz chocolate mint thins (such as Andes mints), chopped

1 tsp. peppermint extract (optional, for an extra burst of minty flavor)


Preparation


  1. Preheat oven to 325°F.

  2. Combine the cookie dough, cocoa powder, mint chocolate chunks, and peppermint extract (if using) until evenly distributed.

  3. Using an ice cream scoop, place 6 scoops of dough on a parchment paper-lined baking sheet.

  4. Bake for 14 minutes.

  5. Enjoy!
