Pizza is the ultimate crowd-pleaser, and this recipe gives it a fun twist! These handheld Mini Pizza Bites are an ideal gameday appetizer, and they’ll be ready faster than delivery. Your guests don’t need to know that you substituted tortillas for the dough — they’ll be too busy enjoying the gooey mozzarella while debating the last play.
Servings: 12
Ingredients
1 ½ c. marinara sauce
⅓ c. parmesan cheese
½ tsp. pepper
½ tsp. salt
1 tsp. red pepper flakes
½ tsp. dried oregano
8 oz shredded mozzarella cheese
4 flour tortillas, 8-in.
Mini pepperoni (or your favorite toppings)
Preparation
Preheat oven to 425˚F.
In a large bowl, mix marinara sauce, parmesan cheese, pepper, salt, and oregano.
Lightly oil a 12-cup muffin tin or coat with a nonstick spray.
Lay tortilla on a flat surface. Using a clean, empty can, cut 3-4 medium circles by pressing firmly in a rocking motion to cut through the tortilla.
Fit a tortilla circle into each of the cups in the muffin tin.
Scoop 1 tablespoon of pizza sauce into each muffin cup.
Sprinkle with mozzarella cheese.
Top with mini pepperoni (or your preferred toppings)
Place into oven and bake for 10-12 minutes, until cheese has melted.
Serve immediately.
Enjoy!
