Grilled Peach Parfaits




Fresh peaches are a delicious summer treat on their own. But when grilled, they take on a new dimension, as the heat softens the flesh and intensifies the sweetness. This recipe adds creamy Greek yogurt, crunchy granola, and fresh mint leaves to provide the perfect end to a backyard cookout. And if you’re not cooking outdoors, you can make them indoors on a countertop grill, making a no-oven-needed dessert that will be a hit with sweet-toothed kids and health-conscious adults alike.

INGREDIENTS


4 ripe peaches

Vegetable or olive oil, for brushing

Greek yogurt, for serving

Honey, for serving

Granola, for serving

Fresh mint leaf, for garnish

 

PREPARATION


1. Preheat grill to 425°F.

2. Using a sharp knife, slice the peaches in half, cutting around the pit. Twist the two halves to separate and discard the pits.

3. Brush the cut sides of the peach halves with a bit of oil.

4. Place the peaches, cut side down, on the grill.

5. Cook for 2 minutes, then flip peaches and cook for 2 minutes more, until the peaches have developed dark grill marks.

6. Transfer the peaches to a serving plate and top with Greek yogurt, a drizzle of honey, and a sprinkle of granola.

7. Garnish with mint leaves and serve.
