Grilled Corn on the Cob (4 Ways)

Nothing says “summer barbecue” like freshly charred sweet corn hot off the grill. These four flavor variations start with the same simple grilled base, then take this classic side dish in deliciously different directions — from sweet and savory to tangy and spicy.
Ingredients
for 4 servings
• 4 ears corn
• 2 tbsp. olive oil
• Salt, to taste
• Pepper, to taste
Garlic Parmesan Grilled Corn
• 4 tbsp. butter
• 1 tbsp. garlic, minced
• ½ c. grated parmesan cheese
Cotija Chili Lime Grilled Corn
• 1 tbsp. chili powder
• ½ tsp. cayenne pepper
• ½ c. mayonnaise
• 1 lime, juiced
• ½ c. cotija cheese
Honey Herb Grilled Corn
• 2 tbsp. butter, melted
• 2 tbsp. honey
• 2 tbsp. fresh chives, minced
• 2 tbsp. fresh parsley, minced
• 2 tbsp. fresh thyme, minced
Sriracha Sesame Grilled Corn
• ½ c. mayonnaise
• 1 tbsp. sriracha sauce
• ¼ c. fresh scallion (green onion), sliced
• 1 tbsp. toasted sesame seeds
Preparation
Preheat a grill or grill plate to medium heat.
Drizzle the corn with olive oil and sprinkle with salt and pepper, ensuring all the ears are evenly coated.
Place the corn on the grill. Close the lid to keep the temperature high, and let the corn cook for about 15 minutes per side, or until slightly charred on all sides.
Remove the corn from the heat and set aside.
Mix wet ingredients as needed (such as garlic + butter, mayo + lime juice, or mayo + siracha), then brush or drizzle over the corn.
Top with remaining spices, herbs, or cheese.
