Buffalo Cauliflower Bites



The Big Game is just around the corner, and you know what that means: party food! Crispy, crunchy cauliflower takes center stage with this lighter take on traditional wings. Choose your favorite hot sauce to control the heat level, and serve with the dipping sauce of your choice. Hot tip: Double the recipe if you’re serving a crowd.

INGREDIENTS


1 large head of cauliflower

¾ c. flour

¾ c. milk or milk alternative

1 tsp. paprika

2 tsp. garlic powder

1 tsp. salt

½ tsp. pepper

¼ c. hot sauce

2 tbsp. vegetable oil

1 tbsp. honey

Ranch or blue cheese (optional, for dipping)



PREPARATION

  1. Preheat oven to 450˚F.

  2. Break the head of cauliflower into florets, about 1½-inch wide.

  3. In a large mixing bowl, add the flour, paprika, garlic powder, salt, pepper, and milk, and stir until well-combined.

  4. Add the cauliflower florets to the batter, making sure each piece is evenly coated.

  5. Bake for 20 minutes, flipping halfway.

  6. In a small mixing bowl, combine the hot sauce, vegetable oil, and honey, and stir until evenly combined.

  7. Brush the hot sauce mixture on the cauliflower and bake for an additional 20 minutes.

  8. Enjoy!
