Blueberries taste delicious on their own, but they’re even better when baked into this dessert. Heating the berries enhances their natural sweetness, while the crisp layer provides a satisfying crunch. Add the creamy yogurt topping, and you have a sweet treat that bursts with summer flavor. Bonus tip: Refrigerate leftover crisp and topping separately, and enjoy them for breakfast the next day!

Ingredients


3 c. blueberries

1 c. rolled oats

½ c. almonds, chopped or slivered

¼ c. whole wheat flour

½ tsp. cinnamon

2 tbsp. coconut oil, melted

¼ c. maple syrup


Garnish


¼ c. Greek yogurt

2 tbsp. maple syrup


Preparation


  1. Preheat oven to 350˚F.

  2. Combine oats, almonds, flour, and cinnamon in a bowl.

  3. Add coconut oil and ¼ cup maple syrup, then mix until evenly combined.

  4. Spread blueberries in a medium-sized baking dish. Pour mixture over top.

  5. Bake 45-50 minutes, or until crisp is golden brown and blueberries start to bubble.

  6. For topping, mix Greek yogurt and 2 tbsp. maple syrup in a measuring cup. Keep chilled until serving. Drizzle over individual portions as you serve them.

  7. Enjoy!
