Grilled Salmon with Avocado Salsa


Outdoor grilling doesn't have to be all burgers, hotdogs, and thick white-bread buns. Take a lighter approach to your barbecued meal with a healthy serving of Grilled Salmon With Avocado Salsa. It's a quick, easy dinner — so easy, you can serve it on a weeknight, and have relatively little mess to clean up!

Ingredients

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon paprika

  • 4 salmon fillets

Avocado Salsa

  • 2 avocados, chopped into large cubes

  • 1/4 red onion

  • 1 lime, juiced

  • 1 tablespoon olive oil

  • 1 1/2 teaspoons salt

Garnish

  • Chopped cilantro

Preparation

  1. In a large bowl, mix oil, salt, pepper, and paprika. Coat the salmon fillets and refrigerate for 30 minutes.

  2. Grill the salmon on high heat for 2 minutes each side.

  3. In a separate bowl, lightly toss the avocados, red onion, lime juice, olive oil, and salt to taste.

  4. Spoon avocado salsa on top of the cooked salmon.

  5. Top with finely cut cilantro and enjoy!
