Mixed Berry Spinach Salad with Strawberry Balsamic Vinaigrette Dressing


Springtime brings us a variety of fresh, seasonal produce that makes it so easy to eat healthy without sacrificing on taste. This salad packs a punch of bold flavors using in-season ingredients like baby spinach, strawberries, and blueberries — all drizzled with homemade strawberry balsamic vinaigrette dressing for a subtle tangy-sweetness. Red onion balances the sweetness, while candied walnuts provide the perfect crunch. Top it off with some feta cheese crumbles, and you'll have yourself a delicious salad that's tempting to look at and even better to eat!

Ingredients

Salad

  • 5 ounces baby spinach leaves

  • 1 cup strawberries, sliced

  • 1/2 cup blueberries

  • 1/2 red onion, thinly sliced

  • 1 sweet apple, cored and thinly sliced

  • 1 cup candied walnuts, chopped

Dressing

  • 1 cup strawberries

  • 1/4 cup balsamic vinegar

  • 1/4 cup extra-virgin olive oil

  • 1 tablespoon dijon mustard

  • 1 tablespoon honey

  • 1 clove garlic, minced

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

Garnish

  • Feta cheese

Preparation

  1. For the dressing, remove the green tops off the strawberries.

  2. Add the rest of the dressing ingredients, and combine in a blender until smooth. Refrigerate.

  3. Cut strawberries, apple, and onion into slices.

  4. Combine all the salad ingredients in a large bowl, drizzle with desired amount of dressing and toss to coat. (Spinach wilts easily, so don't add dressing until ready to eat!)

  5. Sprinkle feta cheese on top and serve.

  6. Enjoy!
